Let's Just Pretend It's Cold Outside

Chilly Night Chili (Southern Living)

2 pounds lean ground beef
1 large onion, diced
1 (28 oz) can diced tomatoes, undrained
2 (8 oz) cans tomato puree
2 (16 oz) cans kidney beans, undrained
1 (4.5 oz) can chopped green chiles
1 cup water
2 garlic cloves, minced
2 Tbsp chili powder
2 tsp salt
2 tsp ground cumin
1 tsp pepper
Hot cooked rice
Toppings: shredded Cheddar cheese, sour cream, sliced olives

- Cook ground beef and onion in a Dutch oven over medium-high heat, stirring until beef crumbles and is no longer pink. Drain beef mixture, and return to Dutch oven.
- Add tomatoes and next 9 ingredients to Dutch oven.
- Bring chili mixture to a boil; reduce heat and simmer 45 minutes. Serve over rice (or Fritos)with desired toppings. Yield: 8 to 10 servings.
